I have already submitted primaries to schools (will list below) and are finishing up secondaries. However, I am not feeling to hot about this cycle, and I have already applied last year. If this year doesn't work out will continue to take higher-level science courses as a DIY postbac since I already completed a formal postbac.

GPA - Currently sits at a ~3.3 cgpa and ~3.2 science gpa. (Currently have a upward trend with senior and post bacc courses)

Medical Assistant -> ~1800 hrs
Emergency Medicine Scribe -> ~500 hrs
Shadowed ENT/Family Medicine -> ~60 hrs

Your service orientation activities are on the low end at 190 hours, but the details also matter.

The regional Texas schools prefer applicants who grew up in their respective parts of the state (and, sure, you have a flat application fee for TMDSAS). Do you have a commitment to rural health?

Did you get any interviews last cycle?

UNC-COM in Greely Colorado haș the Plains to Peak pathway for applicants from certain states (Texas is one)
Meeting the minimum Science GPA 3.5 and MCAT 503 gets you an automatic interview. Your GPA is a bit lower but you may still get an interview after overall review of your app. Plains to Peak
VCOM (already on @Faha's list) offers Texans in-state tuition at any of their branches.
 
You are competitive for the majority of DO schools. I suggest adding these:

As for improvement for my application, is there anything you recommend other than taking upper-level science courses to help my GPA at this point? I think that looking at my application, the GPA is the glaring weakness. Mostly to expand my school list potentially.

Unfortunately, no interviews last cycle. I do have mentions of rural health but not a hard focus on it. Would you recommend raising my non-clinical volunteering to be more competitive at these kinds of schools?

Wow, this is a huge pathway that I have not heard of. I even went to one of their partner programs. Will definitely be looking into these programs. Thank you so much. In terms of becoming more competitive, do you have any recommendations?

Upper level science courses would help. You should receive several DO interviews though with your current stats.
