I'm a traditional in-state applicant applying only to NC State! I'm also a first gen student from a rural area.

I wrote my personal statement about my experience wanting to be an artist until junior/senior year of high school, and how I use/plan to utilize the skills I gained during that time in veterinary medicine! I'm mainly worried about having lower animal/vet hours than I would like.

You probably have a solid shot. I wouldn't be too worried about having a ton of hours as a traditional applicant with a solid GPA (which it should be if your science and last 45 are similar to your cumulative).
It's relatively easy to rack up vet and volunteer hours during a gap year or even just a summer if you have to reapply, but it's much harder to fix a lower GPA. I would continue to focus on keeping your grades up primarily as you finish your degree and revisit the hours only if you aren't accepted this time and receive feedback about it.
