-What is the reasoning behind not western and USC? I’m willing to go anywhere but would like to stay socal if possible. Hoping to get HPSP so school price is not a major factor for me.

for loma linda, you need to have LOR from a religious leader

Very similar in terms of stats to my own application (just graduated from UCLA) so that's a plus. I'd also apply to UCSF (IS tuition if you aren't able to get HPSP). I personally applied to MWU AZ, LECOM, Case, Boston, etc. all as safeties/backups (got interviews but didn't attend them due to getting into UCLA) so you could do the same "just in case". LLU does require a spiritual LOR on their secondary app and USC is PBL (which I hated but hey it's in socal...). I don't think your PAT is a huge dealbreaker (but it is an important part of the DAT) as long as you have things to demonstrate manual dexterity.
