Hello y'all, I'm going to be applying this upcoming cycle and I was hoping to get some input to building a school list because I have close to no idea where to start.

cGPA = 3.95
MCAT = 520
State of residency = NY
Ethnicity and/or race = ORM
Undergraduate institution or category = Like top 50ish school?
Clinical experience = About 2000 hours scribing at a cardiology practice, projected to be 3000 and about 300 hours volunteering at a hospital
Research experience = About 1000 hours with no pubs or posters
Shadowing experience = Non existent (Technically scribing, buuut)
Non-clinical volunteering = TA for peers for about one semester
Other extracurricular activities = Nada
Relevant honors or awards = Phi beta kappa

Overall, I think my stats are pretty strong, but my extracurriculars are heavily weighing down my application. Any idea where I should be applying to?

I suggest these schools with your stats:
All 4 SUNYs
Rochester
Hofstra
Einstein
Mount Sinai
NYU
Columbia
Cornell
Yale
Brown
Tufts
Jefferson
Pittsburgh
U Virginia
Duke
Vanderbilt
USF Morsani
Miami
St. Louis
Washington University (in St. Louis)
Northwestern
U Michigan
Western Michigan
Ohio State
Case Western
Cincinnati
USC Keck
Mayo
Kaiser

Thanks for the reply! The school list seems pretty solid, but it seems like a lot of the schools listed require the casper exam. Is that something that I can take now, and have on time for the application, or should I revise my school list around it?

Yes, you will be able to sign up for the exam and take it in a timely manner. Their dates for it are on their website.

Your lack of EC, nonclinical volunteering, and shadowing will kill off the good of your stats. I would recommend a gap year to fix deficiencies so you can have strongest chance possible.
