Non-URM, cGPA=3.59, sGPA=3.45, MCAT=33R, 2yrs. research (in neurobiology lab), 90hrs physician shadowing, 100hrs volunteering at hospital, 1st gen college student, part-time job first 2yrs of college (non-health related)

Depending on your state of residence, writing and reflection skills, interview ability, LOR's, timing of application and strategic choice of schools your outcome will vary around 72%. Also potentially important: # of MCAT's (and outcomes) and re-application status.

To be more specific my state of residence is IL, I have good written, verbal, and interview skills. I am expecting 6 strong LORs, only took 1 MCAT and am not a re-applicant. I was thinking University of Illinois, University of Southern Illinois, Rosalind Franklin, Rush, University of Iowa, Loyola University Chicago, and other out of state options.

Excellent. Apply early to at least 15 schools near your stats (and interests) and I give you an 85% chance of success.
Pro tip: don't send in more than the maximum number of LOR's at any given school (no matter how good they presumably are)!
