What are they testing in a stress interview?

I agree with the previous poster. I would add that having an A-type personality can be a great thing, when accompanied by an A-class humility and sense of humor. Kindness: use it to kill the bad guys and heal the good ones.
 
I think that the interviewer was trying to inquire about non-academic things that you do(the kind of things you can relate to patients with). It's not likely that you are going to be able to hold conversations about theoretical physics outside of other academics. I think he was trying to test whether you were a science robot or not, and uhhh you didnt give him the answer he wanted. I think you had a good start with video games, so next time you get asked that you shoud roll with things like that. One dimensional people are not very interesting to be around.
