What area should I focus on this late in the game? (July 17th exam)

I took Pearson's practice #1 (aka 2) and scored the following:
Verbal - (33/40) - 73-93%ile
Bio - (33/40) - 78-98%ile
Chem - (31/40) - 77-97%
Reading - (26/40) - 27-47%ile
Quant - (31/40) - 80-99%ile

Composite - 77-97%ile

Clearly my reading score is abysmal, but I don't know how likely it will be to improve that in just 2 weeks.

I have studied from Dr Collins exclusively over the last 2 months. Finished every packet and every exam, and reviewed them all.

From the above grades, what would you say is the subject I could improve on the most in the next 2 weeks? How should I approach it?
 
I would just keep taking practice tests and reviewing all the questions you have missed. By taking practice tests, 1) you are getting used to the format of the test and timing 2) you can learn from the questions you missed and 3) by doing more practice tests, you can help improve reading comp. Your scores, based off that test, look like you are heading in the right direction for test day.

By the way, I am about to take the same test.
 
How well does Dr. Collins's PCAT Prep prepare you for verbal, reading comprehension, and quantative? If you were to prioritize these subjects, how would you?

Quant is definitely the most important. Of those 3 it's the easiest to improve. It's all about getting your timing down because most people run out of time and using various shortcuts such as rounding to arrive at your answer.
