I realize i am kind of late but what exactly counts for extracurricular?
Does it have to be something official? Or can I say I really enjoy having philosophical debates with strangers for example.

Mostly I think about sports or clubs when I hear Extracurricular.

But it's really anything leftover that doesn't fall into any of the other categories. Just make sure you don't list everything or it'll all just look like filler.

volunteering, research, joining clubs/organizations

Oh yeah, and make sure it's something significant if you really want to stretch it. You better be prepared to answer why it was worth including on your application during the interview.
