For the purpose of schools that require two science LORs, what kind of professor counts? I want to get a letter from a professor who taught me in a two-unit, upper division bio class that is not a pre-med pre-req. Will that work?

Also of note, is it important to get LORs from tenured faculty? Or is it okay to get them from associate professors/lecturers as long as they are good letters?

It is not necessary to get a letter from a science prof who has taught you in a pre-req, any science course will do.

I think that the rank/tenure status of the professor does matter to a certain degree only because (or I assume because) professors with a higher rank have been around longer/may be better judges of academic caliber. That being said, I think that the quality of the letter is better (and you'll never know how big of a difference in quality two letters might have, LORs are usually confidential).

Would an engineering professor count for a science LOR?

I don't think an engineering professor would quite count, but if that professor can write you a good letter, I think it would be good to include.

It's hard to say, I would try to stick with the BCMP (biology, chemistry, math, and physics) subjects, but if you really want to use a letter from an engineering prof, contact the schools to which you are applying and see whether or not they would accept it.
