So I am a non-traditional post bac student that finished the pre reqs in May. I have my app in and statistically it looks pretty good for a state school, and there are two of them. I was trying to find a job until next year until my wife and I move when she finishes residency and was wondering what I should do. I have an opportunity to teach Biology/chemistry/physics at a christian school and was wondering if this would be acceptable to do for a year before school if I get in.

Yeah, that seems like a meaningful thing to do in the year off - I think that's all that Adcom's want to see, that you're doing something meaningful. I've heard some say that even taking the year off to travel and explore is also alright, as long as you make something meaningful out of it.
