What do Profs see when you request a LOR?

Okay, I know this question is very neurotic, but please bare with me.

I in 2 classes that I am requesting LORs from, i have submitted many assignments late. However, I will still end up with an A in the course. When I request a LOR, will they be able to view specific assignment grades, or simply the final one, once they submit grades? I will be graduating in a couple weeks, so i'm not sure if they will be able to see my specific assignment scores once i graduate, will that affect how they see me as well?

How would the professors NOT know when you submitted your work or when if it was late?

If your schools uses a grading interface like mine, they're know about every graded assessment you took part in.
