I've gained a lot of weight despite dieting and exercising rigorously despite successfully losing weight before. I've recently been diagnosed with growth hormone deficiency from a pituitary tumor, which is the cause of my weight gain and will be seeing a neurosurgeon to have it removed. Fatigue after this surgery can last weeks to months so if I get interviews post-surgery, how do I navigate this? I can seem disinterested because of the fatigue.

I've had 2 interviews so far so I'm hoping to get more in the coming months. I have a feeling waiting until after I'm done with interviews might be worse since I'll have less time for the fatigue to settle itself before medical school, so I'm either screwed during interviews or medical school. Any pointers would be greatly appreciated!

Your health is paramount. You must decide what you want to do, but you can't anticipate getting interviews from schools that haven't reached out to you. You may want to send a health update to all of your schools and explain that you will take time for recovery. I would certainly listen to your doctors on whether you must push yourself; I would consider the two schools you have interviewed at and think what you would do (notify them about your health and need to recover post-surgery; deferral questions, etc.).

Luckily, most interviews are virtual now, so pushing myself isn't as much as a problem as much as seeming like I'm not interested, which will obviously bite me in the ass.

I'll notify the two schools I interviewed at if I get accepted and the fatigue hasn't settled within a month of matriculation. Otherwise, it's moot.

I did a little digging and it won't hurt my interview performance too much as long as I don't need to focus for a prolonged period, so it looks like I'm good to go. Just need to make sure I response to IIs quickly and reschedule them if they're within a week of my surgery.
