What do you do at shadowing/observing/volunteering?

I'm going to be job shadowing/observing at my dentist's practice soon, and I'd like to hear people's experience with it. Is it just watching the dentist, or is there more to it? Do you usually volunteer after awhile? If so, what would that consist of?
