What do you during the summer at Caribbean schools?

As I understand, the first two years of most Caribbean MD programs is 16 months of class, but that still leaves 8 months in free. So what do you do during the summer months? Stay in the Caribbean? Could you instead go work or do research back in the States? I'm asking because I have a gf who would not be following me to the Caribbean, and I would like to be in the States as much as possible.

SGU is the only one you do not go to Medical school in the summer
