I want to email my IS schools that I haven’t heard anything back from to let them know I’m still interested. Is this what LOI is ? Also, does anyone have a template for how to go about this? Should I even since nothing has changed since my app, still working clinical job fulltime & shadowing.

Yes, that's a letter of interest.

But it's a really a waste of time. The schools know you're interested in them because you sent them an application. This isn't like dating or asking someone to the Prom.

LOI isn't worth anything unless you're on a post-II waitlist. Even then, still not worth a whole lot
