What is the best note taking method?

Hey, I have the habit of taking notes word by word during watching a online video lecture, I overthink a lot during taking notes and don't want to miss out any information to add up. But, eventually I ended up making messy notes of a large number of pages which are boring and time consuming to revise. Please help me with it.

I really enjoy writing down questions (with no answers) while pausing the lecture, then forcing myself to answer those questions immediately following the lecture to assess my understanding. Or, simply have free recall sessions following the lecture with no notes taken the entire time. I supplement with Anki by either using premade decks or simply adding in the questions I took, with answers first using my memory then with review of the lecture. This helps cut down time too since I'm using cued recall and have the questions made already rather than notes then questions into Anki.
