What MCAT score should I realistically aim for to be competitive this upcoming cycle?

The median MCAT's at Howard (505), Morehouse (504) and Meharry (503) indicate that your chances at the HBCU's increase at around 504.
Nevertheless, plenty of folks got into these schools with far less. The 10th percentile for these schools was 499, 498 and 496, respectively.
If you get close to 510, you are a candidate for just about anywhere.

URM (disadvantaged, low SES, first gen, African American female)

Non traditional

3.7 undergrad GPA in psychology (cumulative)

3.4 science GPA (kinda low because of non-prereq science courses I got C’s in before I was premed)

3.8 post bacc science GPA (I’ve taken bio sequence, chem sequence, Orgo, physics and Biochem over 2 years)

50 hours clinical volunteering (hospital patient escort)

1000 hours as an aide in the radiology department in hospital

100 hours non clinical volunteering (bible school mentor)

500+ hours research in a psych lab + publication

16 hours shadowing

I’m finishing up Biochem now, but I’m not very confident about the MCAT. I don’t really do well on standardized tests (my SAT score was quite low even though I did well in my high school classes). What MCAT score should I be aiming for? TIA

Try to do the best you can. There really isn't anyway to prepare like "I want to study to get a 510 and nothing more". Shoot for the stars give it 100% the MCATs binary you are either prepared or your not.

Aside from doing well on the MCAT, your essays and story that you write about will have a large factor on which schools decide to interview you. Writing about how you’ve made it through adversity definitely shows adcoms your dedication to this field. Write well about it and you’ll do fine.
