I know that not everybody accepts their spot but does anyone know the average percent of the class is filled up by the first bunch of admit letters? A rough estimate...?

each school is different. some fill up 50% and some fill up 66%. it varies. i dunno if there is a list out there, but its not an official policy thats documented somewhere.
For MWU-AZ..... "...typically 75 percent of all admissions offers will be made by the end of December of the year prior to matriculation." This was taken directly from there website. Their class size is 110.
For LECOM, they are accepting 100 applicants Dec. 1 for 100 seats.
From my understanding, a school will accept as many students to fill their class. Then if the person(s) who was/were accepted chose a different school, then a spot opens up for more people. So if like 15 out of 100 acceptances choose somewhere else, that school will send out 15 more acceptances at a later date. (Ive heard as late as Feb and March in some cases). But I don't know for sure. I will be sitting staring at my phone on Dec 1st 2012 from 7am-5pm.
I'm sure other schools have different policies. You could call and check with the schools individually.
