This may sound weird, but it is always good to be prepared to say the right things because you don't want to sound overly excited or at a loss for saying the right words in the moment.

What should you say if you get an interview invite via phone? Just be excited and thankful, and keep the conversation on the short end (ask about the interview a little bit and how to confirm going)?

Most interview invites come via email, not phone call.

For acceptances just thank them. Some of them will ask you additional questions like where else you've been accepted but otherwise there's no reason to keep the conversation going, you're already in.

Don't overthink it. I'm sure they've heard it all, from crying to speechlessness. Just thank them. They're not going to revoke your acceptance because you don't respond in some imagined ideal way.
