What upper level sciences can I take that don't require Organic 1 as a prereq?

I wanted to take Biochem or Microbio but I can't, so I need something else to take.

PS: Already took Genetics and Cell Bio

Have you taken Human Physiology? It was extremely helpful for the Biology section of the MCAT. If your school offers A&P you could look into that as well. A&P might not be considered upper level, but its more interesting than some other courses, and it's one of those that might actually cover stuff you will want to know in the future.

agree, physio is a great one and helps you prep for MCAT. also consider anatomy if your school offers it separately. best thing to do though is get your hands on a copy of your course guide and just flip through the biology section since people on SDN don't know what your school offers. anything that could be applied to a person is probably good for med school.

I already took A&P but I'v noticed many students take A&P and Human Physiology. I'll look into it.

I have to retake Orgo 1 but there are no spots so I'm at a stand still until I can get into the class (seems like everything I want to take has Orgo 1 as a prereq). Meanwhile, I can't see myself not take a science course alongside my public health courses.

Take H. Phys. Since you are an aspiring med student, the material will probably interest you. Not to mention, as I've already said, the class covers the majority of MCAT BIO material.
