what's the deal with letters of recommendation?

yeah just a little confused...started organizing my letters recently for my school's premed committee...what's actually happening when the letters are sent to the committee? Do they relay the letters to the schools you apply to? Or generalize what all your references wrote about you into one short, concise letter?
