I'm graduating on May 22nd and will then go to BOLC for officer training before heading to my first duty station. I'm currently covered on the schools health insurance policy, but that will end sometime right around graduation. When will I start being covered by the military insurance plan? I want to make sure there is no gap in coverage in case any emergency arises.

Yes. When you start at BOLC is the official day that you start active duty and are covered by the army health insurance.
You'll fill out some forms at BOLC for lots of things and that is part of in processing into the Army.
