If your grades are strong in your prerequisite science courses, go with the major that will allow you to apply with the highest cumulative gpa. If you have some less than ideal grades in perquisite courses that you feel you need to address by taking upper level science coursework, go with the molecular bio major.
The major on your transcript matters far less than your overall and science gpas

Specialized health science majors tend to perform the least well on the MCAT, IIRC

Go with whichever major you think you would enjoy more. Finish with the highest overall GPA and science GPA you can.

If your science GPA is already solid (3.7 or higher) then pick the one that fits your interests. If you'd like to improve your science GPA and didn't do as well in your science pre-req courses, go with Molecular Biology.

Molecular bio. Better safe than sorry. Learned a BS in Health Sciences is not looked favorably upon.

I've learned from Internet research, talking to admissions people at med schools I'm interested in, and looking at MSAR stats.

I was accepted into a BS in Health Sciences at a small school with a great med school and hospital affiliation, and they keep emphasizing the BS in Health Sciences prepares students for careers in Allied Heath (like Physician Assistant, Respiratory Therapy, etc)

Even if your curriculum is different, do you really want that bias against your application?

Id go for the health sciences major. You'll have higher gpa, and still take a couple upper level bio classes. Plus it sounds like it'll be less work, you can enjoy yourself a little more. Like you said worst case scenario you go DO and still become a physician..
