Why take a year off?

Why is ot common practice to take a year off after graduation, just to study for the MCAT? Is the material that rigorous that it requires a year off for preparation? For instance, if you were a biomed major, is it still necessary to take time off to study for the MCAT? I would think that the MCAT would consist of material we learned as an undergrad, or no?

Also, when you apply for med school, do you need to take the GRE as well?
 
I haven't heard of anyone taking an entire year off to study for the MCAT. Usually people study for it in the summer, and then take it come fall.
