I just had this wonderful random experience today: I went up to my German prof after class to ask if I would be able to major in German (I thought it wouldn't work because I'm a freshman fluent in German and there are very few upper-level courses) and we went to the German department to get the papers for majoring. On the way there he asked me what else I was majoring in and when he found out that I want be become an ophthalmologist, he started talking about how he loves doctors and how he needs to visit his ophthalmologist soon and how I could come along.....This is an opportunity I don't want to miss, right? And I should ask him for a LOR if I'm having him for all four years of my undergrad?

Of course, you'll probably want/need one non-science recommendation for the time you apply. Hopefully, you'll do well in his classes and maintain a good relationship. Also, he seems to respect and support doctors and your going into medicine, so his letter won't be wishy-washy or bitter as some letters can be (when the prof is kind of pissed with the whole pre-med thing sucking bright students away from other disciplines).
