I've been offered a full-time position working for a pharmaceutical company. Would it be bad to accept it knowing that I plan to apply to med school and would leave after only working for the company for one year? Also, in terms of applications, would I be better of using the time to do something more directly pertinent to med school like research or clinical work (I already have some experience with each)?

You can quit whenever you want, someone else will take your place. Get that money and use it to offset some of your medschool expenses. If you don't have clinical experience then volunteer here and there. I don't know what value research will be unless you are applying to an MD/PHD program.

I agree.
