I don't think my school gives Ws when dropping courses in the middle of the semester? There aren't any Ws on my transcript when I check online, and I've withdrawn from 4 classes since freshman year. Does that seem normal? Will AMCAS see Ws or?

That's odd. I've found that it's best to order an official copy of your transcript and pay the 5-10 bucks so that you can be sure you're seeing exactly what AMCAS will see and accounting for everything in your record.
 
AMCAS will see what your school prints on your official transcript.
 
But what about schools that "delete" the first grade if you retake a class? I know it's technically not on the transcript anymore but it was at one point, right? I feel like it's best to be honest. It's really hard to say. I think the Registrar's Office sends student transcripts at the end of every semester to the National Student Clearinghouse so in the case of a deleted grade, it may be possible they have records of the original grade even if your institution doesn't list it on the official transcript.

This is really all speculation but I feel like the best thing to do is be honest as AMCAS expects you to report every grade you've ever received even if your school has internally deleted it. I read somewhere you can order a transcript from the NSC so you should try to order one from there and double check with that before inputting grades in AMCAS.

You're right.

Regarding OP's question, AMCAS says, "A course entry must be made even if the withdrawn course does not appear on the transcript. No credit hours or AMCAS grade will be assigned. A course entry should not be made if the course was dropped within the normal drop/add period and does not appear on your transcript."

Regarding your question on retakes, AMCAS says, "A course entry must be made for each completed attempt of a repeated course, even if any mention of enrollment in the course has been removed from the transcript. If your school has an academic forgiveness policy and subsequently replaces the original grade received with a special transcript symbol, the original grade and attempted credits must be entered on your AMCAS application, regardless of whether they appear on your official transcript. If the original grade is not entered, AMCAS will return your application to you to enter the original grade, which may cause you to miss application deadlines and forfeit fees."
 
This is probably a good question to ask your institution's registration and records department.
