I'm a Junior but have two more years to go in my degree due to a degree change in my sophomore year. I opted not to do summer courses and try and use the extra year to my advantage, which is going to be increasingly useful because of a poor 1st and 2nd year GPA.

I wanted to know what years the admissions committee will look at when considering my gpa. If i apply in my 4th year, will my 5th year be taken into account when i finish it? or will they only look at years 1-4 in which case my extra year is pointless 🙁

I've taken a lot of booster courses but are still in the science realm so they wont be "frowned upon" as easy classes. Taking pathology classes with high averages as opposed to taking a really high average course like "weight lifting 101" (thats a made up course, but you see my comparison).

any input is appreciated.

The adcom will only be able to consider the courses you've completed when you submit your application/transcript. You can send them updates as you complete more semesters, but it's up to each adcom as to how they use (if at all) those updates.

After your acceptance to medical school, the only things about your last year they will care about is 1) did you graduate, 2) did you get a C or better in any remaining pre-reqs.
