Professors' salaries at public schools are public information, and you can look them up for each school. Should give you an idea about academic salaries anyway.
You will be required to do an internship before a residency in almost all cases for veterinary surgery. In academia, 80-90k is the general starting area for a boarded professional straight out of residency in most specialties, including surgery. Large non-academic referral hospitals such as AMC might be more but not by too much unless you're very lucky and in a rich area.
But you also have to factor in the 160,000 or so of debt, and the interest that will accrue when you are in residency. veterinary interns get paid approximately 25k a year (internships are 1-2 yrs). Residents get around 30 if they are lucky (residencies are 3 years). It is very hard if not impossible to pay back loans so they will be in forbearance for 4-5 years.
