Which class are you planning to take instead of Spanish 25? What's the rush in waiting for the academic year to take it?
Med schools don't know/wouldn't care if you're taking a level of Spanish that's technically covered by AP credit. I didn't put any AP credits on my AMCAS.

Also, worth doing to practice what you know and nail an easy A to bump the GPA imo
