I'll make it short and sweet:
- 2 professors taught 1 course and I earned a good grade in the class.
- Only interacted A LOT with 1 professor and got him to write me a LOR.
- Other professor I didn't talk to as much.
- I find out I need 2 LOR from science professors and don't have many options left as I will be applying after this semester.
- I plan on talking with 1 of the professors in my upcoming class very heavily throughout the semester and HOPEFULLY have her write me a LOR at the end of the semester but am conflicted with having her write a rushed letter.

Question:
Should I ask for the letter from my first class with the other professor I didn't talk to as much? Or should I hope for the best that next semester's professor will write me a LOR but at the expense of it possibly being rushed?

I would ask the professor that's teaching you this upcoming semester. I think it'll look weird on your application if you have two LORs from professors that taught you the same class (not to mention that it probably wouldn't be a good letter). What I would do in this situation is talk to the professor A LOT and in April (if you are doing good in the class), mention to him/her that you are applying in June and that although the semester isn't over, ask her/him if they would be willing to write you a LOR once the semester is over. Doing this will have them start thinking about the letter as well as ensure that you will have the letter written at the end of the semester.

I was in your situation and didn't ask till the semester was over when I received my grade. Long story short, he said he couldn't write it because he already had a bunch of letters to write for people that asked earlier. Then I was scrambling around to find someone else to write me one. I don't thing it'll be rushed because even if they submit it mid-June, that alone is still really early in the application cycle.

best bet would be to talk to the professor in the beginning of the semester and ask him to write you one at the end of the semester if you do well in the class.
A lot of schools require 1 bio and 1 chem LOR, so if you are getting two letters from professor who taught the same course, there's a chance those might not satisfy the requirement for some schools and you don't want to risk that.

By the end of the semester, the prof may wish you hadn't taken his course.
