I inquired about statuses at these two universities (they replied refreshingly fast compared to some other programs..) --
Wisconsin: No formal interview day (mentors arrange individual visits). Different timelines, but pretty early, so many have not reviewed applications yet.
From Washington's website: 1/19/11: Interview invitations have started to go out across most areas of our program. They are extended by the faculty. The Grad Program Office does not have advance knowledge of who will be invited or how many are being invited out. Thanks for your continued patience.
