when a school says you will have 30 hours of didactic study, what do they mean?

It means you have 30 hours of scheduled classes/labs in a week. Seems average for dental school. I had 34 scheduled hours last semester in DS.

That seems ridiculous! Are the classes similar to undergrad in difficulty, time consumed, and effort required?

Yes, pretty much. I would say expect a 2.5x increase in workload from undergrad to dental school. Generally I have 7-8 hours of lecture/lab per day.
