Academic rigor of university/college considered by adcom?

I'm just curious about this.

I know some universities/college give easy As.

And some only give As to top 5 percent of the class for all of their STEM classes.

So that makes me wonder if the adcom knows the grading system/academic rigor of each uni/college where applicants come from since GPA from one school is not quite equivalent to GPA from another school. Anyone know anything about this?

That's what the DAT is for, since it's a standardized test that everyone has to take.
