I will be submitting my applications tonight, but I am still doing hospice volunteering and will continue doing so after I submit my applications. How would it look if I submitted my application with updated hospice volunteering hours I did the day before I submitted the app?

Say for example, I already have 200 hours of hospice volunteering, but just added 20 hours from last week. Can I add those hospice volunteering hours to my application?

I am submitting it late due to family reasons.

Yes. There is no reason for you not to claim hours that you have completed. Hell, most people put projected hours as well.
