Doable, but some tasks that require good binocular vision/depth perception will be more difficult. You may have to rely on technology a little more.
Some recent studies have shown that even long-standing amblyopia can be improved with intense training, but it's not a miracle fix. If you wind up in optometry school, you can be assured that you'll become a test subject for their Vision Therapy dept.
