So my plan is to submit everything in June when AMCAS first opens this year. The problem is that I am thinking of delaying my MCAT test date 1 month from 4/24 to 5/31. I know that I can sumbit AMCAS without MCAT scores for processing, but will it hurt me in anyway if I submit it without the MCAT scores? If I take it 5/31 then the scores shoud be available early July. I know that I would be appling in the dark by not knowing my MCAT score but are there any other negatives?

You can submit AMCAS with just one school so that you can get in line for the verification process, then add more schools when you get your MCAT score.

AMCAS doesn't transmit data to schools until June 28th, so if you submit your app on day 1, are verified by the time your scores are ready, your application will arrive at schools with a week of the initial data transfer.
