do we need to know names/structures of amino acids on the real DAT? There is a whole chapter from Kaplan dedicated to amino acids.

I don't think you need to memorize the structure of all amino acids. Just know alanine, and glycin. It would be nice to know the major reactions of amino acids, although I have not seen those on any practice test yet.
