I'm a little concerned about how my course load will be viewed.
Now I'm signed up for 17 units for Spring 2010:

I'm thinking about dropping the Econ class and taking 14 units for several reasons:

- So I can pick up another shift at my job
- So I can allocate more time for my prereqs
- It would most likely be easier to get a better GPA
- I will have more time for volunteering
- I would be less stressed out

The problem is that next semester, Fall 10, I'll be taking around 14 units because I'll be studying for the MCAT while taking 2 prereqs (Bio and Physics 2). On top of this, I'll be graduating a semester late and applying at the end of my senior year.

Should I drop the econ class and take 14 units or should I stay and take 17?

I think that all your reasons for taking a lighter course load are valid. Adcomms like to see you handle a heavy load and still succeed academically, but all of that load need not be coursework. Best to take it slow and steady and not have to do remediation because your cGPA took a dive.

anyone think I should take the 17 units? why?

I probably have said this several times on other threads. I see no problem in dropping a class as long as you plan on substituting this freed up time with some other productive activity (job or volunteering, as you mentioned). By no means is 14 hours considered too low workload unless you were packing all 100/200 level classes during junior year; this would not look right. So to sum it up, go ahead and drop the class.
