Yes! I had an Equine Production class this past spring that involved a lot of hands-on working with horses. We were split into groups and each group was given a pregnant mare and a yearling to work with. We had a list of things the yearling had to be proficient in by the time the class was done. Then we had to monitor the mare for foaling, foal her out, and make sure the foal was proficient in another list of things. It was a lot of fun. I put it under Animal Experiences under the title Equine Production Class. Then in the description I put
"This class required each group to be assigned a yearling to train as well as a pregnant mare to monitor. The yearling had to be taught to be groomed, loaded in a trailer, sprayed, clipped, and walk over a small obstacle course. The mare had to be monitored for signs of parturition and her foal, when born, had to be taught to halter and lead, pick up its feet, and be groomed. I was also able, through this experience, to witness the birth of a foal for the first time."
If you have a really large amount of class time dedicated to working with animals, I would suggest you do it the way chyactnate said =)
