I just want to verify a few things:
1. Does the AMCAS application become available every year on May 1st?
2. For schools that accept the AMCAS application, do any have their own applications to complete instead of the AMCAS app w/ the supplement, or is the AMCAS app w/ the supplement the only option for those schools?
3. Can professors only submit recommendations electronically through the AMCAS app, or can they send in paper copies?

1) It varies from year to year, but it's around the beginning of May
2) You can only apply through AMCAS for schools listed on AMCAS.
3) I'm sure they can send in paper copies, but they have to go to AMCAS for all schools participating in the letter service.

I'm guessing no, since there would be no way to link the letters to your application.

Except by, say, your name...

Keep in mind the letter thing is brand new, it was way more limited before this year, and I think they're still working out some kinks. I'd expect that within the next few years you'll be able to submit them earlier, for simplicity's sake.

In the meantime, there's always Interfolio, I suppose.

More than one person can have the same name. Heck, there's some lady up in Canada, a professor in like Tennessee, and a couple authors with my name. Until you have a number, there isn't any way to really identify you, and you don't get that number until you register for the MCAT, or open an application, as it stands right now.
