I am currently torn between applying this cycle and taking what would be a second gap year to shore up some weak volunteering hours and maybe get better patient stories for my writing. Let me know if you think I'm being anxious for no reason or delaying would do me good.

How much will you actually have by the time you would apply? Project as if you're gonna apply in July, because it would be better to delay your app a month or two to optimize your submission than to apply when you're not ready
 
Everybody shoots for 520 and MCAT the reality is the average score is around 500. Do not take the exam until you are 100% ready.

And you should have at least 150 hours in non-clinical volunteering. It looks best when you are assisting others who are less fortunate than you
