Does anyone know the best way to find admissions averages for OT programs? I have had trouble finding this information on the websites for most of the OT programs I look at, and this seems odd because it is fairly easy to find this information for other graduate programs.
It would be nice to have an idea of what the statistics are for each program so I know which schools are reasonably within my reach when choosing where to apply.

I had the same problem. Some schools provide these numbers while I noticed many of them don't. I think my best advice would be to contact those schools you're interested in and ask them personally. However, as long as I had the minimum GPA/GRE for schools I applied to them because remember these are just averages. I also think many schools look at the students holistically so don't be scared to branch out applying to "higher ranked" programs. Solid experiences and a strong personal statement can also get you in!

Email the admissions director for the program and ask them. Or go to the information sessions for the programs you are interested in and they most likely will discuss that information there.
