When placed in water, glucose ionizes because

(a) glucose is polar
(b) this is a trick question: glucose does not ionize in water
 
B. Trick question - It does not ionize, but if you look at the structure of glucose, you'll notice it has several hydroxyl groups, which allows it to H-bond with water. That makes it very soluble in water.
 
Glucose is covalently bonded in every bond and therefoe will not ionize. However it is miscible with water because it has hydrogen bonding due to all the OH groups.
