I was wondering if anyone could give me some guidance regarding pH calculations, buffers and the hendersen-hasselbach equation on the MCAT. I was curious how it was going to be formatted or how it would be tested because the equations can be difficult to do without a calculator. Or will we be expected to know how to do the long equations?

Examkrackers has fantastic techniques for doing computations fast. Learn these techniques and use them on every practice problem that you do.

Disclamer: I took the old MCAT. Perhaps things are different now.
 
You should know simple log values
like log2 = 0.3010
so log 4 = 2log2
if you know log 3 also
log 6 = log3+log2
You need to know simple log rules and you will be good
