Can I accept a school after april 30 and withdraw if I am accepted to a preferred school?

I was accepted to a school about a week ago and received a packet in the mail asking me to sign my acceptance offer and whatnot. I am currently on the waitlist for another school that I would prefer to attend. Since it is after April 30, can I sign and send in these forms and then withdraw later if I am accepted to my preferred school?
