I'm looking at Irish dental schools which cost approx 300K CAD; how do you secure loans to pay this?

You will be able to obtain loans through the professional students line of credit. There are line of credits available at Royal bank and TD Canada Trust, ranging from 300k-350k with very good interest rates. You will need a very strong cosigner if you go through this route. You will also be able to get loans from your province, and every province has a limit on how much they let you borrow. These can range wildly as some provinces give as little as 8k/year (Ontario), while others can give 20-30k/year (Alberta).

Once you have your acceptance, then go with your cosigner to RBC and/or TD and secure that contract. Then contact your Province to see if your school is designated so you can receive loans. If it is not designated, then you will need to gather up some paperwork from the school and request for designation (a process that takes 3-4 months). Once designated, then you can receive the provincial loans for length of the program.
