MCAT - unknown taking in January is this too late?

EC:
Over 15 years of volunteering at my church, taught bible study did charity banquet etc.
2 medical missions abroad
2 pending publications as coauthor in public health/clinical studies

Have not shadowed a podiatrist yet, but I'm hoping to do that soon is there a minimum required amount of hours?

I just graduated from college so any recommendation on things I should do in the mean time?
 
If you get a 22 or better on your MCAT then your good. You just need to shadow till you feel comfortable enough to ask for a LOR. Also even though you do not need a high score to get into a podiatry school. The higher the score you get the more scholarship money you will receive, so my advice is study hard for the MCAT since you have free time.
