Maybe you could find something that claims to taste like Louisiana or southern food, but isn't the real thing. There's quite a difference.
I'm bringing a case of Tony's, Zatarain's crab cake mix, and Tabasco wherever I end up :laugh:. Unless it's LSU, because then I won't need it.

Good idea. Does it piss you off when you see cajun restaurants elsewhere too? Like the one in the Houston airport just makes me so angry when I see the sign. You can't have good cajun food in an airport!!!

Yeah, and it's not even about what kind of food these places (or any place for that matter) serve, but the seasoning they put on it. You need good flavoring. That's why I hate Cane's, because it tastes like some no-taste yankee chicken (no offense, anyone) but it was made in Baton Rouge. This is why I prefer Popeye's.

Oh yeah, I forgot Popeye's went national. Well I guess there's your exception. Unless they use some crappy different blend of spices. Who knows what they do outside of LA.
Of course, I've heard that there is no "spicy" option when you reach a certain latitude.

That's not Cajun food. It's just chicken seasoned well.

You know, I might hit up some alligator at the Chimes tomorrow or Monday, since I now go to Baton Rouge every week now. I have to move my furniture into storage by the 31st. 🙁

Yeah, I have a place but I don't move in until Aug 7th.
I am NOT hauling my furniture back 70 miles each way again. That wasn't fun, so I just got a storage unit in BR.

and the thing about Popeye's is - it's the Cajun fast food (but if it doesn't have the spicy option it doesn't count)
 
My definition of Cajun food consists almost solely of seafood. Fried chicken isn't cajun even if you add Tony's to it, IMO.
The only seafood that's not done best Cajun is probably lobster, the whole Maryland crab thing, and I guess Alaskan king crab.
Everything else seafood = south/Cajun rules
No other place has fresher, better cooked seafood (esp scrimps and crawfish)
And it's crawfish, not crayfish. It bugs me when LSU professors say crayfish - don't they know people get mad?

You're missing out. When you have a Tulane interview, you'll have to get some real cajun food.

Mostly, yes. Except for things like jambalaya. Like metallica said, it's more about the spices used than the actual food.

Wish interview season coincided with crawfish season. Crawfish boils are the best. Yummy mudbugs.

You know, I actually didn't like crawfish that much until this past year. I felt very un-Louisianian.
But then again, I'm not really a fan of any food that requires that much work to eat it. It's not like we're neanderthals anymore, right?
 
I would like to have some interviews if no other reason than because I haven't gone anywhere this summer, and probably won't until school starts. 🙁

But you're going to Washington like the second week of school. And you're gonna watch LSU dominate. That's fun. Interviews as vacations will be weird. I mean I'll be freaked up until the interviews, but the night after, I'll be ready to party it up. 🙂

:laugh: But it's fresher that way, and I like the atmosphere. Although with cuts on your hands, it's painful. Best thing is to tell the non-natives "Don't eat the dead ones!" 😆

I feel it's the red pepper that makes it kickass.
Another big one down here is the Zatarain's crab boil - that's used for almost anything, but mostly various boils of sea critters. It has a special blend of stuff that gives crawfish, crabs and shrimp their flavor.
If you think about it, those meats are very bland and take the flavor of whatever they are marinated/cooked in. Same for alligator.
 
I was trying to get to 400 tonight, but I really can't stay up any longer. 😴
I have work in less than 8 hours, so I will finish this tomorrow night.
Hopefully I get sent home early and I can make it up to Baton Rouge before 6pm.

Both. Tony's is more thought of as added after, I guess, but just like you'd use pepper or salt before you cook it when you were making something, you'd use Tony's before too.

Well, like I said, at my house we use "Slap Ya Mama" but yes, that's the idea. I mean, we rarely have salt and pepper on the table. Tony's does the job of both. Oh, hot sauce too if it's appropriate.
 
I can't stalk your mdapps and other people took them down too. This will prove to be frustrating during the cycle. How will I be able to keep up with everyone's interviews and acceptances, etc?

why do you need to do that?
