KC barbecue is good and everything, but it doesn't hold a candle to Texas barbecue.

No way. KC bbq is where it's at. We barbecue just about every type of meat. Beef, ribs, burnt ends, smoked sausage, beef brisket, pulled pork, etc. Texas barbecue has been pretty much all beef in my experience. And kc-style sauce is delicous-- smoky, sweet, spicy, and tangy 😍 It's fantastic. Making me hungry just thinking about it.

Beef, ribs, burnt ends, smoked sausage, beef brisket, pulled pork, etc. Texas barbecue has been pretty much all beef in my experience. oh man, i won't be either. I guess Louisiana and Georgia are going to have to do.

I'll admit, we do love our cattle. Not quite as much pork, but some of the barbecue joints around here make some of the best sausage out there.

Rice that's cooked with bell pepper, onion and celery. I think traditionally it had chicken liver to give it the "dirty" look, but I prefer it without that :laugh: I've had it with chicken and sausage in it instead.

I'm not big on chicken liver, gizzards, or hearts either. But my mom's from Louisiana and she prefers to cook it with all the normal ingredients.

Yeah, I'm sure if I'd grown up with it I'd be fine eating it. Heck, even now if I didn't know I was eating it I would probably like it.

I was fine with it when I was a kid. I'm not very fond it of now, just doesn't sit right, I guess.
